we're off on fall break to balsam mountian, north carolina!

hopefully we won't really see any bears in cherokee.

we're staying here and possibly going to get see this!

spring turkey salad

since the weather has been either SO hot or really rainy, i've been trying new simple recipes at home.

one that i discovered at work, actually on 'Live at 5 at 4, was Pimento's Turkey Salad

but of course i changed it up a little bit:

Spring Turkey Salad Sammies

2 cups smoked deli turkey, cubed

1/4 C. red bell pepper, diced

about 1/3 C. celery, diced

1/4 C. sliced almonds

1/3-2/3 C. mayo {depends on your dicing skills & liking of mayo}

salt & pepper

Dice all ingredients to about the same size cubes. Toss in a large bowl with mayo.

Maybe 1/2 t. spicy mustard added in, optional.

Salt & pepper to taste.

Serves great on Honey wheat bread!

bad blogger

i'm sure you've seen the zoloft commercials with the little white blob

well that's me. i've been the white, pasty blob lately.
sorry for being terrible about updating.
i have a ton of attempted posts and drafts that i never published, so i promise to get back in the routine asap.
my uncle barry passed away at the end of february and i guess getting back to my normal self hasn't happened as fast as i thought it would. the weather hasn't helped either (until this week).
it seriously rains for 5 days straight.
blah.
